Gingerbread Men
An online friend, Dana (Maternal1), sent me the recipe for these absolutely delicious Gingerbread Men.  My girls really enjoyed helping make them and then devouring them afterwards.  This recipe makes the best gingerbread as they turn out crunchy and have a nice, mild flavor.  Thanks Dana!

1 cup butter
1 1/2 cups sugar
1 egg
1 tbsp light molasses
1 1/2 cups cake flour
1 1/2 cups all-purpose flour
1 tsp baking soda
2 tsp ground cinnamon
1 tsp ginger
1/2 tsp salt
1/2 tsp ground cloves

Preheat oven to 375 degrees. Cream butter and sugar; add egg and molasses. Sift dry ingredients into a separate bowl. Mix dry ingredients into butter mix and blend together well Roll and cut into gingerbread men or other shapes. Place on ungreased cookie sheets and bake for 8-10 minutes.

Frost as desired with royal icing.

Dana's helpful hints:
1. Original recipe calls for 2 cups cake flour and 1 cup all-purpose flour. Use these measurements if you want softer cookies.
2. I use Brer Rabbit light molasses.
3. When rolling and cutting cookies, use flour and wax paper. The more flour you use, the more elastic the dough will get (easier for handling). Also, flouring the cookie cutters will make cutting easier.
4. Make the dough early and refrigerate - makes the dough easier to roll.
