Rainbow Cookies
A fun recipe to make with the kids from Your Big Backyard, April 2000.  These do not keep very long, but it makes a small batch and they're so cute and yummy the kids will want to eat them up.   

1/2 cup butter -- softened
1/2 cup powdered sugar
3/4 teaspoon vanilla
1 cup flour
food coloring

Place the butter, sugar and vanilla in a medium-sized bowl and beat with a mixer until creamy. Add the flour and beat for several minutes more until a smooth dough forms. 

Divide the dough into 7 pieces. Place each piece in a separate small bowl and add several drops of food coloring to each bowl. Make each piece of dough a different color - IE: red orange, yellow green, blue, purple, pink, etc...

Work the color into each piece of dough with your hands. Then roll the dough into a ball. Wash your hands before working on a different color.

Next press all the dough balls together. Roll them into a log. The log should be about 8 inches long. Chill the log in the refrigerator for about 15 minutes. 

Slice the log into 1/4-inch thick slices. Place the slices on a cooking sheet and bake for 10 minutes at 350 degrees F.
