Porcupine Meatballs
An easy to prepare, kid favorite meal.
1 lb ground turkey or chicken
1/4 cup long-grain rice -- uncooked
1 egg -- slightly beaten
2 tbsp finely chopped onion
1/2 tsp seasoned salt
1 can condensed tomato soup
1/2 cup water
1 tsp Worcestershire sauce
Combine ground meat, rice, egg, onion, seasoned salt and 1/4 cup of the soup; mix well.
Shape in about 20 small balls and place in skillet. Mix remaining soup, water and
Worcestershire sauce together and pour over meatballs. Bring mixture to a boil, then
reduce heat and simmer covered for about 40 minutes, stirring often.
NOTES : When the meatballs are done, the rice kernals will plump up and stick out of the
meatballs. Hence the name, porcupine meatballs.
