Peanut Butter and Jelly Muffins
These are really yummy and use two of my youngest daughter, Alicia's, favorite foods.  She really loves to help make and eat these. 

1 cup whole wheat flour
3/4 cup all-purpose flour
1/4 cup sugar
4 tsp baking powder
1/2 tsp salt
1 egg -- beaten
1 cup 1 % milk
1/4 cup oil
1/4 cup creamy peanut butter
1/4 cup jelly -- use favorite kind

Preheat oven to 400 degrees. Line muffin pan with 12 liners.   In large bowl, mix flour, sugar, baking powder and salt. In small bowl, add beaten egg, milk and salad oil until just blended; stir into flour mixture just until moistened. Fill muffin cups one-third full. Drop about 1 tsp each peanut butter and jelly in center of each; top with remaining batter.  Bake 20 minutes or until golden on top. Immediately remove muffins from pan. Serve warm or wrap and store at room temperature.
