Apple-Raisin Scones
I absolutely love scones or muffins of any kind. This recipe is one of my
own creations. They smell fabulous while cooking, and although they taste great any
season, would be perfect for a fall breakfast.
2 cups flour
2 tbsp sugar
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 1/2 tsp cinnamon
6 tbsp cold, unsalted butter -- cut in pieces
1 cup Granny Smith apples -- peeled & finely chopped
1/2 cup raisins
1/4 cup milk -- up to 1/3 cup
cinnamon-sugar mixture
Preheat oven to 400 deg F. In a large bowl mix together dry ingredients. With a pastry
cutter or 2 knives, cut in cold butter until mixture resembles coarse crumbs. Stir in
apples and raisins with a fork. Add enough milk to make a stiff dough. Gather the dough
into a ball, place on a lightly floured surface, and knead just until smooth.
Place dough on a greased baking sheet or stone and pat it, with floured hands, into a
9-inch circle. Using a floured butter knife, cut into 12 wedges, as you would a pie, but
leave wedges in place on the baking pan. Sprinkle with cinnamon-sugar mixture and bake at
400ºF. for about 20 minutes or until scones are a light brown on top. Place on baker's
rack. Enjoy warm or room temperature.
